Thai Noodle Salad

Serves 4
Ingredients:
1 x
fiid Aromatic Lentil & Sweet Potato Curry
250g Thai Rice Noodles
½ inch Ginger, grated
½ lime zest
1 x lime juice
2 tsp Agave
1 x Carrot, thinly sliced
½ Courgette, thinly sliced
8 x Cherry Tomatoes, quartered
1 tbsp toasted Sesame Seeds
1 x Red Chilli, thinly sliced
1 tbsp Mint, chopped
1 tbsp Basil, chopped
1 tbsp Coriander, chopped
Salt & Pepper
Method:
Boil some water and prepare your noodles according to the directions on the back of their pack.
In a pan add your
fiid Aromatic Lentil & Sweet Potato Curry
along with the grated ginger, lime juice and zest. then add your agave and bring to a simmer.
Prepare the rest of your ingredients by thinly slicing the carrot, courgette and chilli while also chopping the tomatoes.
Toast the sesame seeds and chop all your herbs.
Drain your noodles and add to the pan along with the sauce, turning the heat off and stir to combine, ad in the vegetables and half your herbs.
Serve and sprinkle with the remaining herbs and toasted sesame seeds. Enjoy!
