Mediterranean Inspired Summer Buddha Bowl

Ingredients

  • 1 fiid Hearty Chickpea Tagine
  • 1/2 red onion
  • 4tbsp hummus
  • Juice of ½ lemon
  • Couscous
  • 8 cherry tomatoes
  • 4 olives
  • ½ cucumber
  • 1 tbsp olive oil
  • Sea salt and black pepper
  • Coriander leaves, to garnish

Method

  1. To prepare the couscous, boil the kettle and follow the instructions on the back of the pack. Cover and allow to sit.
  2. Once ready add some olive oil, lemon juice and salt and pepper, mix to combine.
  3. Cook your Hearty Chickpea Tagine by following the back of pack instructions, and prepare your toppings;
    - Thinly slice the red onions
    - Cut the cherry tomatoes in half
    - Remove the stone from the olives and roughly chop.
    - Dice the cucumber into medium pieces.
  4. Divide everything evenly between two bowls, top with 2tbsp of hummus on each bowl, season and sprinkle with coriander. Season with salt and pepper and enjoy.
